Fiesta Casserole Recipe

1 pound ground beef
1 small onion, chopped
1 cup salsa
2 tablespoons chili powder
1 teaspoon Instant Beef Bouillon
1 cup whole kernel corn
1 (2 1/4-ounce) can sliced ripe olives, drained
1 (8 1/2-ounce) package corn muffin mix
1 cup (4 ounces) shredded cheddar cheese
1 (4-ounce) can diced green chiles
  1. Preheat oven to 350°F (175°C).
  2. Combine beef and onion in medium skillet; cook over medium-high heat, stirring occasionally, for 5 to 6 minutes or until beef is no longer pink. Drain. Stir in salsa, chili powder and bouillon; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 5 to 6 minutes. Stir in corn and olives. Spoon into ungreased 9-inch square baking pan.
  3. Prepare batter for corn muffin mix according to package directions. Stir in cheese and chiles. Spoon over meat mixture.
  4. Bake for 30 to 35 minutes or until top is golden brown. Serve with additional salsa, if desired.

Hamburger Corn Pie Recipe

1 pound ground beef, lean
1/4 pound bulk sausage
1 small onion, chopped
1 clove garlic, finely chopped
16 ounces canned tomatoes, whole
16 ounces corn, whole kernel, canned, drained
24 black olives
2 teaspoons chili powder, or to taste
1 1/2 teaspoons salt
1 cup cornmeal
1 cup milk
2 eggs, well beaten
4 ounces shredded cheddar cheese

Cook and stir hamburger, pork sausage, onion and garlic until meat is brown; drain. Stir in tomatoes (with liquid), corn, olives, chili powder and salt. Heat to boiling. Pour into ungreased baking dish, 9 x 9 x 2 or 12 x 7-1/2 x 2-inches, or 2 quart casserole.

Mix cornmeal, milk and eggs; pour over meat mixture. Sprinkle with cheese. Cook in 350 F. oven until golden brown, 40 to 50 minutes.

Garnish with parsley sprigs and black olives if desired.
